Ingredients

Protein: 300g Chicken breast, finely diced

Base: 500ml Cook Mania Chicken Stock

Aromatics: 1 tbsp Cook Mania Minced Garlic

Main Component: 400g Mixed mushrooms (Cremini, Shiitake, and Oyster), sliced

Finish: 100ml Heavy cream, fresh thyme, and a squeeze of lemon

Seasoning: Sea salt, cracked black pepper, and a pinch of nutmeg

Instructions

  1. Sear the diced chicken in a large pot over medium-high heat until golden brown; remove and set aside.
  2. Sauté the mixed mushrooms in the same pot until they release their moisture and turn deeply caramelized.
  3. Stir in the Cook Mania Minced Garlic and thyme, cooking for 1 minute until fragrant.
  4. Deglaze the pan by pouring in the Cook Mania Chicken Stock, scraping up all the flavorful browned bits from the bottom.
  5. Simmer the mixture for 15 minutes to allow the flavors to fuse perfectly.
  6. Blend half of the soup for a thicker consistency, then return the chicken to the pot.
  7. Finish by stirring in the heavy cream and seasoning with salt, pepper, and nutmeg before serving hot.
